At my husband’s urging, “You need to put this on your blog!” So here it is…
Sausage and Ham with Black Beans & Sweet Potato Stew (Serves two)
1 tsp. oil
1/4 lb. ground Italian sausage or chorizo
1/3 lb. cooked ham or turkey sausage
1 med onion, chopped
1 T. minced garlic
1 sweet potato, peeled/diced
1 red bell pepper, diced
1 can (14.5 oz) diced tomatoes and juice
2 T. chopped green chili or jalapenos (adjust to your taste)
1/2 c. water
1 can black beans, rinsed/drained
1/4 tsp salt
Heat oil to cook ground sausage and ham. Add onion, garlic and bell pepper – cook until tender. Mix in sweet potato, tomatoes & juice, black beans, pepper and water. Bring to a boil. Simmer about 15 minutes or until sweet potato is tender.
Wish I had taken a photo…sorry! But it is a very colorful soup so it feeds the eyes and the pallet. Two combinations in cooking that I love!
