Layered Crock pot Chicken and Beans
I’m a huge fan of throwing things together that I have on hand AND (especially) using my crock pot! (At one point, I owned eight! Now I’m down to a lean four!)
Layer the ingredients as given in your crock pot:
1 can drained Navy beans (or I used a bag of frozen, which worked great)
salt and pepper
4 packed cups fresh spinach (or feel free to use more, if desired)
1/2 medium onion diced (I often use frozen onion or the combined frozen onion/pepper blend)
3-4 chicken breasts (using frozen is fine)
1 can cream of chicken soup ~ ADD to soup: 1/4 c milk, 1/4 c sour cream, 2 T minced garlic and pour over chicken
After covering the chicken with the soup, top with ground black pepper
Cook on high for 5 hours or low for 8 hours.
I liked that when it was finished, it was very creamy but not too “soupy”.
